Rainbow Waffles

 

Don’t these colorful rainbow waffles make you feel like a kid again?  Truth be told, my mom never served rainbow waffles.  But if she did, I would have remembered them forever.  They’re just so cute…and playful…and colorful!  However, there is a method to getting the vibrant colors to pop.  So take note.

 

 

Rainbow Waffles

Makes 6 servings

 

Ingredients

2 eggs

2 cups all-purpose flour

1 3/4 cup milk

1/2 cup vegetable oil

1 tablespoon sugar

4 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

Gel food coloring (assortment of colors)

 

Directions

Preheat waffle iron. In a large bowl, beat eggs until fluffy. Add in flour, milk, vegetable oil, sugar, baking powder, salt, and vanilla, and mix until smooth. Divide batter into as many colors you would like to make. Add gel food coloring to color each batter and stir until blended. Your colors will cook up much lighter so make sure you add enough food coloring for vibrant colors. Pour batter into piping bags and cut off tips. Using different colors pipe batter in waffle iron. Cook according to waffle iron directions.

 

Serve with butter and syrup.

 

Serve with flavored syrups, such as strawberry, blueberry or consider making your own.  Take light corn syrup, add flavored extract and food coloring (optional).
