Light and refreshing, this is a great salad to serve when the weather begins to heat up. It’s perfect to bring to your next picnic.
Asian Chicken Salad
Makes 4-6 servings
4 boneless cooked chicken breasts, shredded
1 head Romaine lettuce, cut into bite size pieces (about 3 cups)
1/4 head Napa cabbage, thinly shredded (about 3 cups)
1/4 head red cabbage, shredded (about 2 cups)
1 large carrot, shredded (about 2 cups)
1/4 cup chopped almonds
1 (11-ounce) can Mandarin oranges in water, drained
Sesame Dressing (see recipe)
In large bowl combine chicken, lettuce, both cabbages, carrots and almonds. Toss with Mandarin oranges and sesame dressing. Serve immediately.
2/3 cup olive oil
1/4 cup seasoned rice vinegar
3 tablespoons packed brown sugar
2 tablespoons sesame oil
2 1/2 tablespoons soy sauce
1 tablespoon toasted sesame seeds
Whisk all ingredients in bowl until dressing is combined.
