Bacon Wrapped Dates
Makes 24-30 dates
1 pound dates, pitted
1 pound sliced bacon, cut in half
4 ounces goat cheese
Preheat oven to 400˚F.
Slice dates lengthwise but not all the way through. Stuff dates with cheese. Wrap each date in bacon and place seam side down a wire rack sitting on baking sheet. This way the dates will not sit in the bacon grease as they cook. You can use a toothpick if bacon starts to unravel. Bake for 20 minutes, turning half way through, until bacon is crisp. Remove from oven and drizzle maple syrup over dates. Serve immediately.
