Chocolate Chip Scones

We made these chocolate chip scones for our Halloween Boo Tea (see link below).  With just a little sprinkle of decorative sugar, they really sparkle!

Chocolate Chip Scones

Makes 4-6 servings

2 1/2 cups flour

1/2 teaspoon salt

1/4 cup sugar

2 1/4 teaspoons baking powder

6 tablespoons cold unsalted butter (cut into small pieces)

3/4 cup milk

2 eggs

2 tablespoons vanilla extract

1 1/2 cups chocolate chips

White or clear sparking sugar (for topping)

Preheat oven to 400°F.  Line baking sheet with parchment paper.  In bowl, combine flour, salt, sugar, and baking powder. Mix well.  Add butter and mix until you have a slight crumble to the texture.  In another bowl, whisk together milk, eggs, and vanilla.  Set aside 1-2 tablespoons; add the remaining to the dry ingredients and mix.  Stir in chocolate chips. Dough should be thick and moist.  On a floured surface, roll out dough.  Using a round cookie cutter, cut out scones and place on baking sheet.  Brush remaining egg mixture on top of scones and sprinkle with sparkling sugar.  Bake for 20 minutes or until light golden brown.
